Place the pan on the stovetop, add the frozen snow peas, and heat over high heat. Fry the snow peas, swirling the pan occasionally to prevent sticking. As soon as the first tender, brown spots appear on the green peas from frying, turn off the stovetop and continue cooking with the residual heat. Add a teaspoon of lemongrass paste and a tiny splash of oat milk while stirring, mixing well. Season to taste with wok salt, black pepper, curry powder, and a tiny bit of paprika. If desired, add a little more oat milk and stir. There shouldn’t be a sauce; the snow peas should just be smoothly coated in the seasoning. Goes very well as a side dish to rice dishes, but also tastes great on its own. This recipe is designed for one person as a main course.
