Asian zucchini fritters with spring onions

Ingredients for 2 servings:

  • 400 g zucchini
  • ½ bunch of spring onions
  • 100 g flour
  • 50 g rice flour
  • 1 tbsp soy flour
  • 1 tsp salt
  • mineral water

Instructions

Working time approx. 25 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 45 minutes

Mix the dry batter ingredients. Gradually stir in the mineral water with a whisk until a very thick batter forms. Let stand for 10 minutes. Stir in a little more mineral water if necessary. Remove the cores from the zucchini. Grate the zucchini and slice the spring onions. Mix both into the batter. Heat enough oil in a medium-sized frying pan to completely cover the bottom. Place several mounds of batter into the pan, spread them out with a spoon, and flatten them. Fry the fritters over medium heat for 5-7 minutes on each side. Drain on kitchen paper and serve with a chili dip.
