Ingredients for 4 servings:

  • 6 tbsp olive oil
  • 2 limes (juice and grated zest)
  • Salt
  • pepper
  • 1 tsp honey, light
  • 250 g asparagus, white
  • 1 bunch arugula (large)
  • 100 g raw ham, thinly sliced ​​(Parma)

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Combine oil with lime juice and zest. Season with salt, pepper, and honey. Slice the asparagus diagonally into thin slices. Mix with the marinade. Cover and marinate for 2 hours. Trim and dry the arugula. Mix the asparagus with the arugula. Serve with the ham. Serve with Italian white bread and a young white wine.
