Asparagus and ham casserole

Ingredients for 4 servings:

  • 1 kg white asparagus (or 500 g each white and green)
  • 200 g ham (cooked ham)
  • 100 g ham (lean raw ham)
  • 3 eggs
  • 1 cup of cream
  • 200 g cheese (grated cheese, preferably Gouda or butter cheese)
  • Salt
  • pepper
  • some nutmeg, grated
  • 1 tsp sugar
  • 20 g butter for the pan and for frying
  • 2 tbsp chives, rolled

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel the asparagus (just trim the ends for green asparagus) and cut into 5 cm long pieces. Cook in water with sugar and a little salt for about 10-15 minutes until al dente. In the meantime, cut both types of ham into thin strips and fry in a pan with half the butter. Then drain the asparagus and let it drain. Grease a baking dish with the remaining butter and add the asparagus pieces, mixing in the ham. Now mix the eggs with the cream, nutmeg, pepper, and a little salt (if you like, add the chives) and pour over the asparagus. Bake the casserole in the oven at 200°C for about 15 minutes. Sprinkle the cheese on top 5 minutes before the end of the baking time. We eat the casserole as a main course with baguette and a fresh leaf salad.
