Asparagus and ham pan

Ingredients for 2 servings:

  • 700 g asparagus, green
  • 150 g ham (Serrano)
  • 3 cloves garlic
  • 3 eggs
  • 4 tbsp olive oil
  • e.g. salt and pepper

Instructions

very simple: green asparagus with Serrano ham, garlic and egg

Trim the ends (about 1 cm) of the unpeeled asparagus and then cut the asparagus spears into 3-4 cm long pieces (green asparagus, unlike white asparagus, does not need to be peeled). Heat the olive oil and sauté the asparagus pieces for 15 minutes over medium heat, turning occasionally. Then tear the ham into small pieces and add it to the pan. Press in the garlic and then add the eggs. Mix everything well and let it set for about 5 minutes, stirring occasionally. Season with a little salt and more pepper and serve immediately while hot.
