Asparagus bomb from the smoker

Ingredients for 4 servings:

  • 240 g country ham, raw
  • 100 g cooked ham, large slices
  • 700 g minced beef
  • 5 stalk(s) asparagus, fresh, finger-thick
  • 125 ml hollandaise sauce
  • 200 ml barbecue sauce, e.g. Almdudler BBQ sauce/glaze (recipe in the database)
  • some spice mix, e.g. South African Rub spice mix from Spice Market

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 45 minutes; Total time approx. 2 hours

Lay out the raw ham in a rectangular grid, about 2 cm longer than the asparagus on both sides. Spread the ground beef evenly on top and season with the South African rub mixture. Then add a layer of cooked ham to prevent as much sauce and asparagus liquid from getting directly into the minced meat. Place the asparagus on top of the ham and pour over a little hollandaise sauce. Roll everything up into a roll and, if necessary, “touch up” the outside with a little raw ham. Then brush with the Almdudler BBQ sauce/glaze. Brush with the BBQ sauce occasionally.
