Asparagus, cheese and minced meat soup with wild garlic

Ingredients for 4 servings:

  • 500 g asparagus, peeled
  • 400 g minced meat
  • 400 g processed cheese, e.g. cream or Gouda
  • 500 ml vegetable broth or meat broth
  • 1 bunch of wild garlic
  • 1 onion(s)
  • some butter or oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Asparagus soup with a twist

Brown the minced meat in a pan with a little butter or oil and set aside. In the same pan, sauté the finely chopped onions with a little butter or oil until translucent. Pour in the meat or vegetable stock. Finely chop the wild garlic and simmer in the stock for about 5 minutes. Remove the pan from the heat and puree the wild garlic and onions using an immersion blender (this step can be omitted if you prefer chunky wild garlic and onions). Add the peeled and finely chopped asparagus to the stock and let it simmer for about 10 minutes, until soft. Add the fried minced meat and finally stir in the cheese spread. Note: I find the soup flavorful enough thanks to the cheese spread. If you like, you can of course season it with salt and pepper to taste.
