Asparagus Cooked in Sous Vide

  • 300 g Asparagus (1.5 cm thick)
  • 20 g Butter
  • 1 pinch Sugar
  • 1 pinch Sea-Salt
  • 1 piece Vacuum bag
  1. Cooking asparagus in Sous Vide is the perfect method for me to prepare this wonderful vegetable to the point. The asparagus retains its wonderful aroma and is perfect every time.
  2. First, carefully wash the asparagus tips off and peel the asparagus thoroughly. Break off the lower end of the asparagus stalks, as this is mostly woody.
  3. Season the asparagus with a pinch of sugar and a pinch of salt. Carefully place the stalks next to each other in a vacuum bag (the asparagus should be in a row and not on top of each other), put the butter in the bag and seal it.
