Asparagus gratin

Ingredients for 4 servings:

  • 200 g Black Forest ham, diced
  • 500 g asparagus, green
  • 500 g asparagus, white
  • Salt and pepper, freshly ground
  • 600 g potatoes, new
  • some fat for the mold
  • 200 ml cream
  • 4 eggs
  • some nutmeg
  • 120 g cheese, spicy, freshly grated

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Preheat the oven to 180 degrees Celsius (gas mark 3). Wash the asparagus, peeling the white asparagus whole and only the bottom third of the green asparagus. Cut the asparagus into pieces and blanch briefly in salted water. Peel, wash, and slice the potatoes. Layer the potatoes, asparagus, and ham in a greased gratin dish. Whisk the cream with the eggs, season with salt, pepper, and nutmeg, pour over the gratin, sprinkle with cheese, and bake for 30 to 40 minutes until golden brown, or until the asparagus is tender.
