Ingredients for 4 servings:
- 1 ½ kg asparagus
- salt and pepper
- 100 g butter
- 100 g Parmesan, freshly grated
- 1 pinch(s) of sugar
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Milanese style
Peel the asparagus and boil it in salted water with a pinch of sugar for 10 minutes. Then remove it from the cooking liquid and drain well. Melt the butter and use some of it to butter a baking dish. Set the rest of the melted butter aside. Now alternate the asparagus and Parmesan in the baking dish, season lightly with pepper, and drizzle with the remaining butter. Cover with aluminum foil and cook in a preheated oven at 160°C for 10 minutes. Then remove the foil and brown lightly for another 5 minutes using the top heat. Serve with fresh baguette/ciabatta or young potatoes tossed in butter with parsley and Parma ham. A well-chilled rosé or white wine goes well with it.
