Asparagus omelet

Ingredients for 2 servings:

  • 4 eggs
  • 400 g asparagus, in a jar
  • 50 g cheese, grated
  • 6 tbsp milk
  • 1 tbsp flour
  • salt and pepper
  • 1 tsp parsley, finely chopped
  • 1 tsp tarragon
  • Oil, for frying

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Whisk the eggs, season with salt and pepper, and add the milk, flour, and herbs. Mix everything until smooth. Heat the oil in a pan, add half of the omelet mixture, and fry. After flipping, top the omelet with asparagus and half of the grated cheese, fold it over, and let the cheese melt. Repeat. Serve warm.
