Asparagus pizza

Ingredients for 4 servings:

  • 1 pt. dough (yeast dough)
  • 1 kg asparagus
  • 200g mozzarella
  • ½ bunch chervil
  • 10 slices of Parma ham
  • 1 jar dried tomatoes
  • 2 tbsp tomato paste
  • 3 sprigs rosemary
  • 1 cup crème fraîche
  • salt and pepper
  • oil

Instructions

Working time approx. 35 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 35 minutes

Prepare the yeast dough according to the instructions, folding in the chopped rosemary and tomato paste. Let the dough rise until it has doubled in size. In the meantime, peel and wash the asparagus and cut it into small, bite-sized pieces. Then fry it in a non-stick pan for about 10 minutes, adding a little water every now and then to prevent it from burning. Place the dough on an oiled baking sheet and spread the asparagus on top. Season with salt and pepper. Slice the mozzarella and chop the tomatoes, then spread them on the pizza. Finally, sprinkle flakes of crème fraîche on top and bake in a preheated oven at 190°C for about 10 minutes. Once the pizza is cooked, top with the whole slices of Parma ham and the finely chopped chervil.
