Ingredients for 4 servings:
- 1 pack of frozen puff pastry, 450 g
- 500 g asparagus
- 8 slices of cooked ham
- 100 g cheese (Emmental), grated
- 3 tbsp chives, cut into fine rolls
- 1 egg yolk, well beaten
- salt and pepper

Thaw the puff pastry and cut into squares. Carefully peel the asparagus and cut into 3cm long pieces, then cook in salted water for 10-12 minutes until al dente. Allow to cool. Finely dice the ham, mix with the grated cheese, chives, and asparagus, and season generously with salt and pepper. Place 2-3 tablespoons of the asparagus mixture into the center of each puff pastry sheet and then fold the sheets diagonally closed. Press the edges down with a fork and brush the parcels with egg yolk, making sure to coat the edges well. Bake in an oven preheated to 200°C (convection not recommended) for around 15 minutes, until the parcels are golden brown. Serve with hollandaise sauce, for example, or enjoy the parcels on their own.
