Asparagus rösti with ham cubes

Ingredients for 4 servings:

  • 1 kg potatoes
  • 2 eggs
  • 6 tbsp oat flakes
  • 2 onions
  • 1 clove(s) garlic
  • 125 g ham, diced
  • 4 tbsp cornstarch
  • 500 g asparagus
  • 1 tsp vegetable broth
  • Salt and pepper, to taste

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

First, peel the potatoes and coarsely grate them. Peel the asparagus and chop them into small pieces. Peel and finely chop the onion and garlic. Mix the grated potatoes (without any liquid) with the chopped onion, garlic, oats, and cornstarch. Stir in the eggs. Fold in the asparagus and season the mixture well. Don’t season too sparingly, or the rösti will taste bland. Fry a few cubes of ham in hot oil and add the rösti mixture to the pan. Reduce the heat slightly and fry the rösti until golden brown. Turn after about 5-7 minutes. It’s best to use a large plate or cutting board to prevent the rösti from falling apart. Then fry the rösti on the other side. Check after a few minutes whether the potatoes are cooked. If you don’t like cubes of ham, you can also use well-cooked ham!
