Ingredients for 4 servings:
- 350 g asparagus, green, lower third peeled, diagonally cut into 5 cm pieces
- 350 g white asparagus, peeled, cut diagonally into 5 cm pieces
- 100 g pine nuts
- 2 garlic cloves, diced
- 3 tbsp honey
- 4 tbsp lemon juice
- 6 tbsp olive oil
- salt and pepper
- Sugar
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Cook the white asparagus in a little sugar and salt water for 8 minutes. After 4 minutes, add the green asparagus. Cook until al dente, then drain. Dry-roast the pine nuts in a pan. Add the garlic, honey, lemon juice, and olive oil, bring to a boil briefly, then season with salt and pepper. Mix the vinaigrette with the asparagus pieces. You can also add a sliced lettuce heart, if desired.
