Asparagus salad with potato vinaigrette

Ingredients for 4 servings:

  • 600 g asparagus, can also be broken, but not too thin stalks
  • 300 g potatoes, boiled
  • 1 pack of ready-made mix (Salad Crowning Garden Herbs)
  • 100 ml water, or asparagus cooking water
  • 3 tbsp sunflower oil
  • 3 tbsp balsamic vinegar, white, to taste
  • 2 tsp mustard
  • 1 pinch(s) of sugar
  • pepper

Instructions

Working time approx. 25 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

Peel the asparagus, cook until al dente, and cut into approximately 3 cm pieces. For the vinaigrette, combine water or the asparagus cooking water in a bowl with oil, vinegar, mustard, sugar, and salad dressing. Grate the cooked potatoes and mix with the vinaigrette. Finally, add the asparagus pieces and season with pepper. Let stand for about 15 minutes.
