Asparagus toast

Ingredients for 4 servings:

  • 750 g asparagus, white
  • 250 g asparagus, green
  • Salt, sugar
  • 70 g butter
  • 2 tbsp lemon juice
  • 4 slice(s) toast bread, (sandwich toast)
  • 2 tomatoes
  • 4 slice(s) ham, cooked
  • 4 slice(s) cheese, Gouda, large
  • 2 tbsp parsley, chopped

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Rinse and peel the asparagus, and remove the ends from the white asparagus. Cook in salted water with 1 pinch of sugar, 20g butter, and the lemon juice for 20 minutes. Remove from the water and drain well. Briefly toast the bread in the toaster. Brush the bread with the remaining butter. Wash the tomatoes and slice them, removing the stems. Remove the rind from the ham, if necessary. Arrange the tomatoes, asparagus, and ham decoratively on the bread slices. Cover with cheese, then bake in the oven preheated to 200°C for about 15 minutes. Sprinkle with parsley before serving.
