Ingredients for 4 servings:
- 500 g asparagus, green
- 500 g asparagus, white
- 1 tsp butter
- Sugar
- 1 bunch of sage
- pepper
- 8 slices of Parma ham
- 90 g butter
- 1 tbsp lemon juice
- 2 balls of mozzarella
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Heat salted water with butter and sugar. Cook the white asparagus for 15 minutes and the green asparagus for 12 minutes. Drain and place in a baking dish. Wash and pat dry the sage, pluck 16 leaves, and halve them. Cut the mozzarella into 16 slices, sprinkle with pepper, and top each with 1/2 a sage leaf. Halve the ham slices and wrap them around the mozzarella to form small parcels. Arrange them on top of the asparagus in the baking dish. Bake in a preheated oven at 250°C (E), mark 4 (G) or 200°C (fan oven) until the cheese has melted slightly. Melt the butter, add the remaining chopped sage leaves, and brown briefly. Season with lemon juice and drizzle over the asparagus.
