Ingredients for 4 servings:

  • 3 pig’s feet
  • 1 small pork knuckle(s)
  • 1 pig’s ear(s)
  • 3 bay leaves
  • 3 carrots
  • 4 garlic cloves
  • 15 peppercorns
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Racituri de porc (piftie de porc)

Wash the pig’s feet, pig’s ear, and pork knuckle, cover with cold water, and bring to a boil with the remaining ingredients. Season with salt and simmer gently for 2-3 hours (50-60 minutes in a pressure cooker). Then remove the meat from the broth. Remove the cooked meat from the bones and cut into bite-sized pieces. Add the rind, if desired. Remove the carrots and chop them finely. Place everything in a deep bowl. Strain the broth through a sieve and season with salt and pepper. Pour over the meat and carrots until everything is covered, then refrigerate and let the broth set.
