Atti's onion and honey roast

Ingredients for 4 servings:

  • 1 kg roast pork (roast pork with salmon)
  • 2 onions, red
  • 4 tsp honey, creamy
  • 2 handfuls of vegetables (mixed vegetables such as carrots, cauliflower, peas) frozen
  • 1 handful of celeriac, finely chopped
  • salt and pepper
  • Paprika powder, sweet
  • Oil, for frying
  • Butter, for frying
  • Flour, for thickening
  • n. B. water

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours

Preheat oven to 200°C (fan). Peel and dice the onions, place them in a small bowl, and mix with the honey. Season the meat with salt, pepper, and paprika. Heat the oil and butter in a roasting pan. Sear the meat on all sides. Pour on a little water, about 2 cm deep. Then spread the onion and honey mixture over the roast and place the whole thing in the oven. Reduce the oven temperature to 150°C. After about 20 minutes, arrange the vegetables around the roast in the broth. Then leave the whole thing in the oven for another 1 to 1 1/2 hours (I always set the timer for 30 minutes and check every 30 minutes to add more water if necessary). About 15 minutes before the end, increase the oven temperature again to about 200°C, so the onions will brown a little more. Then remove the roasting pan and thicken the sauce with flour.
