Ingredients for 4 servings:
- 1 kg pumpkin(s), peeled
- 2 m.-sized onion(s)
- 40 g butter
- 1 liter chicken broth
- 200 g whipped cream
- 150 g sour cream, crème fraîche or sour cream
- Salt
- Pepper, white
- nutmeg
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes
Sauté the diced onions in butter, add the pumpkin and broth, simmer for 30 minutes, then puree. Stir in the spices, cream, and crème fraîche to the soup, and season to taste.
