Autumn salad with pears and cheese

Ingredients for 4 servings:

  • 2 heads of lettuce, romaine hearts (or other lettuce)
  • 3 small pear(s), aromatic
  • 200 g cheese, spicy, e.g. medium-aged Gouda, Emmental or blue cheese
  • 1 tbsp cream cheese
  • 1 tbsp mustard, mild
  • 1 tbsp honey, creamy
  • 2 tbsp Balsamic vinegar bianco
  • 1 tbsp oil
  • 1 tsp thyme, shredded
  • salt and pepper

Trim the lettuce and cut/tear into bite-sized pieces. Peel the pears to taste (you can also use them with the skin on). Then remove the cores and dice the flesh. Dice the cheese as well. Arrange both on top of the salad. To make the dressing, first mix the cream cheese with the mustard and honey until smooth, then stir in the balsamic vinegar and oil. Finally, season with thyme, salt, and pepper. Pour the dressing over the salad and toss everything well before serving. Pears go well with many types of cheese, but spicy varieties are particularly good. It doesn’t matter whether you use semi-hard or soft cheese.
