Marinated beef steaks Caprese

Ingredients for 4 servings:

  • 250 ml red wine
  • 2 garlic cloves, more if desired
  • 1 bay leaf
  • 4 peppercorns
  • 1 tsp rosemary, dried
  • 4 beef steaks
  • 2 tbsp oil
  • 2 m.-large tomato(s)
  • 125g mozzarella
  • salt and pepper
  • 1 tbsp flour
  • 100 g mascarpone
  • possibly milk
  • salt and pepper

Steaks in a spicy red wine marinade topped with tomatoes and mozzarella

For the marinade, peel and finely chop the garlic cloves. Mix them with the red wine, bay leaf, lightly crushed peppercorns, and rosemary. Place the beef steaks in the marinade in a sealable container. Let them marinate in the refrigerator for at least 4 hours. Then heat the oil and sear the steaks on both sides. Meanwhile, thinly slice the tomatoes and mozzarella. Remove from the pan and place on a wire rack lined with aluminum foil. Top the steaks with the tomatoes and mozzarella and sprinkle with salt and pepper. Place under the broiler at 200°C for about 15 minutes, until the cheese has melted. In the meantime, you can make a spicy sauce from the cooking juices and the remaining marinade. To do this, first remove the bay leaf and any coarsely ground pepper from the marinade. Sauté the flour in the hot cooking juices and slowly add the marinade while stirring. Bring to a boil, stir in the mascarpone, and bring back to a boil. Thin with a little milk if desired. Season with salt and pepper.
