Autumn Starter

The perfect autumn starter recipe with a picture and simple step-by-step instructions.

  • 400 g Butternut squash
  • 150 g Smoked trout fillet
  • 2 Spring onion
  • 100 g Cream cheese
  • 1 tbsp Lemon juice
  • Salt pepper
  • —- für die Marinade —
  • Juice of one lemon
  • 1 tsp Honey
  • 3 tbsp Rapeseed oil
  • 2 tbsp Roasted pumpkin seeds
  • Salt pepper
  • Some olive oil
  1. Peel the pumpkin and cut into wedges.
  2. Place on a baking sheet, season with salt and drizzle with a little olive oil.
  3. Cook the pumpkin in a preheated oven at 190 ° for 30 minutes.
  4. For the marinade, mix up lemon juice, honey, rapeseed oil, roasted pumpkin seeds, a pinch of salt and pepper with the hand blender.
  5. For the cream, finely chop the spring onions and the smoked trout fillet.
  6. Put both with the remaining ingredients in a bowl and mix well.
  7. Form cams with two spoons and chill until the pumpkin is ready.
  8. Let the cooked pumpkin cool down a little and drizzle the marinade on the plate and put the trout cream on top.
