Ingredients for 1 servings:

  • 500 g pumpkin flesh (Hokkaido pumpkin), in small cubes
  • 500 g peach(s), fresh, in small cubes
  • 500 g gelling sugar (2:1)
  • 2 stalk(s) cinnamon
  • 1 vanilla pod(s), pulp
  • 4 tbsp rum

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Pumpkin and peach jam with a delicate flavor, makes about 5 jars of 250 ml each.

Place the pumpkin and peach cubes (1 kg total) in a large pot. Add the cinnamon sticks. Mix in the vanilla seeds and the empty peach halves. Stir well with the preserving sugar. Bring the mixture to a boil and simmer for about 3-5 minutes. Test for setting. Then pour into hot, rinsed jars. Seal the jars and turn them upside down for 5 minutes.
