Ingredients for 6 servings:
- 40 g almonds, ground
- 50 g whole wheat flour or spelt flour
- 140 g wheat flour type 405
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp gingerbread spice
- 1 egg(s)
- 40 ml oil, neutral
- 40 g butter, soft
- 100 g sugar
- 100 g apples, peeled and cut into pieces
- 100 g pear(s), peeled and cut into pieces
- 120 ml apple juice
- 120 ml pear juice
- 2 tbsp oat flakes
- 2 tbsp cane sugar
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
In a small bowl, combine the almonds, flours, baking powder, baking soda, and gingerbread spice. In a large bowl, beat the egg, sugar, oil, butter, pear juice, and apple juice. Stir in the flour mixture and mix briefly until smooth. Add the pear and apple pieces. Place paper muffin cups in one or two muffin tins. Spoon the batter into the cups. Sprinkle with the oats first, then the brown sugar, if desired. Bake in the oven at 160°C (convection oven) for 20 minutes. Remove the muffins from the tins and let them cool on a wire rack.
