Avocado and asparagus salad

Ingredients for 2 servings:

  • 1 bunch of green asparagus
  • 4 avocados
  • 2 balls of mozzarella
  • ½ can corn
  • 2 shots of olive oil
  • 2 shots of balsamic vinegar
  • 1 pinch of sea salt
  • 1 shot of rapeseed oil
  • 1 dashes lime juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 23 minutes

Summer salad

Wash the asparagus, trim off the lower (woody) third, cut into approximately 2-3 pieces, and fry in a little rapeseed oil. Season lightly with salt and drizzle with lime juice. Peel and finely chop the avocado and place it in a bowl. Sprinkle the corn on top. Chop the mozzarella into small pieces and arrange it in the center. Drizzle olive oil and balsamic vinegar over the salad, sprinkle with salt, and finally arrange the fried asparagus on top. Delicious with grilled meat or white bread, perfect for summer.
