Avocado and cucumber salad with lime vinaigrette

Ingredients for 2 servings:

  • 2 avocados
  • 1 large cucumber(s), organic, untreated
  • 1 lime(s), juice and zest, organic, untreated
  • 2 tbsp vinegar
  • 2 tbsp water
  • 1 tbsp walnut oil
  • 1 tbsp dill
  • e.g. salt and pepper
  • n. B. coconut blossom sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Halve and pit the avocado, then scoop out the flesh with a spoon and dice it. Wash and grate the cucumber. Prepare the vinaigrette and season to taste. Mix everything together and serve fresh.
