Avocado and Tomato Pasta

The perfect avocado and tomato pasta recipe with a picture and simple step-by-step instructions.

  • 200 g Spaghetti
  • Salt
  • 1 Clove of garlic
  • 400 g Date tomatoes
  • 1 Ripe avocado
  • 10 Basil leaves
  • 5 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 1 tsp Red chilli flakes
  • 0,5 tsp Sugar
  • Pepper from the grinder
  1. Cook the pasta in plenty of boiling salted water according to the instructions on the packet, while cooking the peeled garlic clove. Wash and quarter the tomatoes. Halve the avocado, remove the stone, lift the pulp out of the skin with a spoon and dice. Roughly shred the basil. Put everything in a large bowl. Add 3 tablespoons of olive oil, lemon juice, chilli flakes and a little sugar. Add salt and Season the pepper and mix gently. Drain the pasta. Mash the garlic with a fork and add to the tomato and avocado mixture. Mix in the pasta and serve, drizzled with 2 tablespoons of olive oil.
