Ingredients
 

  • 4 Discs Whole grain bread
  • 1 size Fresh avocado
  • 1 tbsp Lemon juice
  • Salt and pepper
  • 100 g Bacon slices
  • 1 tbsp Oil
  • 4 Eggs

Instructions
 

  • Toast the bread slices in a toaster. Halve and core the avocado and remove the flesh with a large spoon. Mash with a fork, season with lemon juice, salt and pepper.
  • Fry the bacon slices in a pan until crispy, remove from the pan. Add the oil to the pan, crack open the eggs and fry them as a fried egg.
  • Spread the avocado on the bread, top with slices of bacon and fried egg, sprinkle with salt and pepper and serve.
