Ingredients for 3 servings:

  • 300 g penne or other pasta
  • salt water
  • 1 garlic clove(s), possibly more
  • e.g. freshly squeezed lemon juice
  • 1 egg yolk
  • 120 ml cream
  • 3 slices of bacon
  • 1 avocado(s)

simple carbonara with a twist

Cook the pasta in salted water according to the package instructions. Meanwhile, add the avocado flesh and garlic clove to a blender and blend briefly until the ingredients reach a creamy consistency. Then add the egg yolk and lemon juice and blend again. Gradually add the cream and blend until the mixture is creamy enough. Place a piece of kitchen paper on a plate, add the bacon strips, and microwave for 3 minutes at about 800 watts. Of course, you can also prepare the bacon the traditional way in a pan. Ideally, the sauce should be ready before the pasta, so the pasta is still warm, as the sauce isn’t heated and the warm pasta will reach a pleasant temperature. Finally, drain the pasta—it’s best not to rinse it with cold water—and place it in a bowl. Toss the pasta with the sauce, then break the bacon into small pieces and sprinkle over the top. This carbonara is very versatile and also tastes great with cherry tomatoes, broccoli, bell peppers, etc. Sprinkle with Parmesan cheese if desired.
