Avocado cream with herbs

Ingredients for 4 servings:

  • 2 radishes
  • 1 handful of cress
  • 1 bunch of basil
  • 10 mint leaves
  • 3 cloves garlic
  • 2 avocados, soft
  • 2 tsp lemon peel
  • 4 tbsp lemon juice
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Suitable as a spread or cold starter.

Halve the avocados, remove the pit, and scoop out the flesh from the skin with a spoon. Wash and chop the radishes. Peel the garlic and mince or crush it as desired. Remove the mint and basil leaves from the stems and finely chop. Grate the zest of 1-2 unsprayed lemons and mix everything together with a fork in a bowl until a paste forms. Then stir in the lemon juice and season with salt and pepper. Refrigerate until ready to serve. Serve the avocado and herb cream on a good baguette and garnish with cress.
