Avocado Cupcakes – Spring Cups

The perfect avocado cupcakes – spring cups recipe with a picture and simple step-by-step instructions.

for the cupcakes

  • 100 g Flour
  • 1 tsp Baking powder
  • 1 pinch Salt
  • 4 piece Free range eggs
  • 140 g Sugar
  • 1 packet Vanilla sugar
  • 150 g Ground hazelnuts
  • 70 g Chocolate 70% cocoa
  • Lemon juice of half a lemon
  • 2 piece Ripe avocado about 300 grams

for the frosting

  • 120 g Powdered sugar
  • 1 tbsp Freshly squeezed lemon juice
  • 120 g Cream cheese
  • 120 g Melted butter
  • Green food coloring, powder or semi-liquid

for decoration

  • 150 g Marzipan raw mass
  • Food coloring red, yellow, blue
  • A few thick sour strings, or other pliAble cAndy

Preparatory work

  1. Let the flour with a pinch of salt and 1 teaspoon of baking powder trickle through a sieve so that no lumps form in the dough. Finely chop the chocolate. Squeeze the juice of half a lemon. Separate the eggs, beat the egg whites until stiff.
  2. Cut the avocados in half with a knife, remove the core. Spoon the pulp out of the avocados, immediately pour the lemon juice over them and puree.

Preparation of the avocado cupcakes

  1. Beat the egg yolks with sugar and vanilla sugar with the mixer until it becomes creamy. Add the hazelnuts, chocolate and avocado and stir. Stir in the sifted flour. Finally, carefully fold in the egg whites.
  2. Empty the batter into a muffin tray lined with paper liners. Fill about 2/3 of the molds. Process the dough very quickly, do not let it stand too long, otherwise the cupcakes will not become loose.
  3. Slide the muffin tray into the preheated oven and bake the cupcakes at 180 degrees for about 25 minutes (toothpick test !!!). Remove the baking pan and let the cupcakes cool completely.

Preparing the frosting

  1. Sieve the powdered sugar and stir with the cream cheese and 1 tbsp lemon juice. Add melted butter and stir only until it is smooth. “Caution” if you stir too long, the frosting coagulates and liquefies.
  2. Add enough green color to achieve the desired color. Cover the bowl and place in the refrigerator for at least an hour.

Preparation of the decoration

  1. Divide the raw marzipan mixture into three parts and color each particle yellow, red or blue with food coloring. Shape the colored marzipan into small acorns and flowers.

Assembling the spring or Easter baskets

  1. Pour the frosting into a piping bag and pipe onto the avocado cupcakes. “Drill” the holes for the handle with an oblong object and press the handles into the holes.
  2. For Easter baskets, place the marzipan acorns nicely on top. Decorate the spring baskets with marzipan flowers and the pretty avocado cupcakes are ready.

  1. Instead of avocado, you can prepare the dough with carrots. You need 300 grams of carrots for this and proceed as follows: Peel the carrots, grate them finely, add to the egg yolk, sugar and vanilla sugar mixture and continue as described in the recipe.
