Spring Cupcakes

The perfect spring cupcakes recipe with a picture and simple step-by-step instructions.

For the muffins:

  • 350 g Sifted flour
  • 1 packet Baking powder
  • 1 tsp Baking soda
  • 1,5 tsp Salt
  • 4 piece Eggs
  • 200 g Sugar
  • 240 g Soft butter
  • 250 g Milk
  • 1 tsp Vinegar
  • 1 piece Grated lemon peel
  • 1 piece Freshly squeezed lemon juice

For the topping:

  • 150 g Powdered sugar
  • 340 g Soft butter
  • 400 g Cream cheese double cream setting
  • 1 piece Vanilla butter flavor
  • Bourbon Vanilla Mill
  1. For the muffin batter: Preheat the oven to 180 degrees and prepare the muffin tin with paper liners
  1. Mix the flour, baking powder, baking soda and salt. Mix half a teaspoon of vinegar with the milk and set aside.
  1. In another medium-sized bowl, stir the eggs very well with a hand mixer, at least 30 seconds. Then add the sugar and mix again for about a minute. Now add the very soft butter and mix everything very well again. Then add the lemon peel and lemon juice. Use 1 or 2 lemons, depending on how strong you want the lemon flavor to be.
  1. With the hand mixer on low, half of the flour mix is ​​now added. Mix everything well and then add half of the milk-vinegar mixture and mix well again. Repeat the process until the flour and milk are used up.
  1. Pour the fairly liquid dough into the paper cases, about 2/3 full. I use a measuring cup for the liquid dough (see photo).
  1. Now put the muffin tray in the preheated oven and bake the muffins for about 10-15 minutes. Test with a toothpick that the muffins are ready.
  1. Let the muffins cool completely on a wire rack.
  1. For the topping: 1. Mix the very soft butter with a hand mixer until it is nice and soft and fluffy.
  1. 2. Gradually add the powdered sugar. Add 2/3 of the cream cheese. Mix everything well for 1-2 minutes. Depending on the consistency of the mixture, add powdered sugar or fresh cheese. Maybe a little milk. The mass should be fluffy and creamy. Try in between so that the mixture doesn’t get too sweet. Then add the vanilla butter flavor and something from the vanilla mill (from Dr. Oetker), stir everything again briefly.
  1. 3. If you want, you can color the topping, I used powdered food coloring and colored the mixture yellow.
  1. Decoration: Now fill the cream cheese and butter mixture into a piping bag and squirt on the cooled muffins. Decorate as you wish! Good luck and bon appetite! 🙂
