Ingredients for 1 servings:
- 3 eggs, size L (one more for size M)
- 1 avocado(s)
- 1 small onion(s), red
- 50 g butter or ghee (the latter if you want it to be lactose-free)
- 100 g bacon
- 1 tsp Dijon mustard
- 1 tsp sambal oelek
- 1 shot of vinegar (garlic vinegar)
- 1 garlic clove(s)
- 1 pinch(s) vegetable broth, instant, clear
- 1 pinch of salt
- 1 pinch(s) of pepper
- 1 pinch(s) of Italian spice mix, fresh or frozen, not dried!
- 1 pinch(s) of chives, fresh or frozen, not dried!
- 1 pinch(s) fenugreek
Instructions

Boil the eggs hard. When they’re done, peel them and break them up a bit with an egg slicer or a knife to make them easier to puree. Meanwhile, cut the bacon into small pieces and fry them in a pan without any fat until crispy. Then set aside. Dice the avocado. To peel the avocado, it’s best to cut a small piece on one side and then peel it with your fingers. Then cut a line around the pit, pulling the halves apart to expose the pit. Remove the pit, then dice the avocado. Melt the butter or ghee in a small bowl in the microwave or in a small saucepan on the stovetop; do not let it boil! Finely dice the onion. Peel and press the garlic cloves. Place all ingredients (including the spices) in a tall bowl that can be pureed. Puree everything. Serve in small bowls or glasses and sprinkle the crispy bacon on top as a garnish. Then serve. Additional tips: Always use fresh or frozen herbs, not dried ones, as this will lose the herbs’ flavor. Also, when cooking dry, choose bacon without sodium nitrite, as otherwise, nitrosamines can form, which are harmful to health. This also applies to grilling, so be sure to use bacon from a butcher. It’s suitable either for two people as a low-carb breakfast or for four people as a small appetizer, as it’s very filling. Can be eaten either plain or with pastries. Salt sticks are particularly suitable for this. It also works as a dip.
