Ingredients for 2 servings:
- 2 large eggs, organic, hard-boiled
- 1 large avocado(s), ripe
- 1 small onion(s)
- some water, maybe
- 2 tbsp tartar sauce or mayonnaise
- 1 tsp mustard
- 1 small garlic clove(s)
- salt and pepper
- 1 dashes olive oil
- 1 dashes balsamic vinegar
- possibly herbs, various (e.g. parsley, coriander or marjoram)
- possibly paprika powder
- possibly curry powder
- possibly cheese

Hard-boil organic eggs, rinse with cold water, peel, and set aside. Caution: If the yolk is still a bit runny, you can still use it, but it will give the spread a different flavor and won’t keep for as long. Peel and pit the avocado, cut into pieces, and mash it in a medium bowl with a fork as desired. Mix in the crushed garlic clove and chopped onion along with salt, pepper, and a splash of olive oil. Tip: If raw, chopped onions are too strong for your taste, you can put them in a small cup before mixing them in, add a little boiled water, let them steep for 10 minutes, strain, and mix them into the avocado mixture—or omit them altogether. Cut the hard-boiled eggs into pieces. Add them to the avocado mixture along with mayonnaise and/or tartar sauce. Season to taste with mustard, paprika, curry, sweet balsamic vinegar, and fresh or frozen herbs, if desired. Note: Herbs add a special flavor to the spread, so increase the amount slowly. Variation: with cheese cubes such as Gouda. Delicious with all types of bread, grilled food, or sausages. An ideal snack for on the go: Prepare without garlic, simply pour into a small, washed-out jam jar, add a fork, bread roll, and a napkin, and you’re done.
