Ingredients for 2 servings:
- 1 avocado(s) (preferably Hass)
- 1 mango(s)
- 10 m.-sized shrimp(s), cooked and peeled
- ½ pomegranate
- ½ lemon(s), juice
- 3 sprigs of mint
- 3 tbsp olive oil
- 1 tbsp sesame oil
- 1 passion fruit
- 1 chili pepper(s), pitted
- e.g. salt and pepper
- Sugar
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Peel and pit the avocado and mango, then dice the flesh. Mix them with the prawns in a bowl and drizzle with the juice of half a lemon. Halve the pomegranate and, using a spoon, scrape out the seeds over the bowl. Finely chop the peppermint leaves and mix them into the salad. For the dressing, halve the passion fruit and, using a small spoon, scoop out the juice and seeds into a sieve. Squeeze out the juice with a spoon. Mix with the two types of oil, the finely chopped chili pepper, pepper, and salt, and season to taste with a little sugar. Mix the dressing with the salad and serve.
