Avocado meets mozzarella

Ingredients for 20 servings:

  • 2 packs of mozzarella (mini mozzarella), a total of 40 balls
  • 1 bunch of basil
  • 2 cloves of garlic
  • 1 large onion(s)
  • 3 avocados, ripe
  • 2 tbsp lemon juice
  • 150 g crème fraîche
  • salt and pepper
  • Chili sauce (Thai sauce)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Amuse-bouche

You’ll need 20 small shot glasses and 20 toothpicks. Place a basil leaf and two mozzarella balls on each toothpick. Chop the avocado flesh, remaining basil, garlic, and onion, and blend everything with crème fraîche and lemon juice using a hand blender. Season with salt and pepper. If desired, you can also add Thai sauce. Fill the shot glasses halfway with the cream and add the skewers.
