Avocado-melon salad with shrimp

Ingredients for 2 servings:

  • ½ avocado(s), ripe
  • ¼ cantaloupe melon(s) or Charentais melon
  • 6 shrimps, with tail segment, cooked
  • 1 lime(s), juice of half and 2 lime wedges
  • 2 tbsp olive oil (lemon olive oil)
  • salt and pepper
  • 4 mint leaves

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

For the dressing, combine the lime juice with salt and pepper and whisk in the oil. Finely chop the mint and add it. Carefully peel the avocado, remove the stone, cut the flesh into thin wedges, and immediately drizzle with some of the dressing. Peel the melon and also cut it into thin wedges. Layer both decoratively and drizzle with the remaining dressing. Serve with the shrimp and lime wedges.
