Ingredients for 4 servings:
- 2 tbsp pine nuts
- 2 avocados, ripe
- 2 pears, ripe
- 3 limes
- Oil (olive oil)
- 75 g Parmesan
- Salt
- Pepper, freshly ground
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
In a small, sealed pan, roast the pine nuts without oil until light brown. Peel, halve, and core the avocados and pears. Quarter the fruit, cut into thin strips, arrange them alternately on a plate, and drizzle with lime juice and olive oil. Grate the Parmesan cheese and sprinkle the pine nuts over the salad. Season with salt and pepper. This salad only tastes good when the avocados and pears are truly ripe.
