Ingredients for 4 servings:

  • 1 avocado(s), fully ripe
  • 2 shallots, finely diced
  • ½ bunch parsley, finely chopped
  • 3 tbsp crème fraîche
  • 1 lemon(s), untreated, juice and zest of one half
  • Salt and pepper, black from the mill

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with asparagus or other vegetables

Halve the avocado lengthwise, remove the pit, and puree the resulting flesh. Mix the diced shallots with finely chopped parsley, crème fraîche, lemon zest, and the avocado puree. Season to taste with lemon juice, salt, and pepper.
