Avocado spread with ajvar

Ingredients for 4 servings:

  • 2 avocados, ripe
  • 5 cherry tomatoes
  • 2 tbsp Ajvar, hot or mild
  • half onion(s)
  • 1 dashes lemon juice
  • Salt and pepper from the mill

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Michi’s way

Dice the onion. Cut two ripe avocados lengthwise, remove the pit, and scoop out the flesh with a teaspoon. Roughly mash it with a fork. Mix with a squeeze of lemon juice, the diced onion, and the ajvar. Dice the cherry tomatoes into small pieces and mix into the spread. Season with salt and freshly ground pepper. Spread a thick layer on lightly buttered, fresh, or toasted farmhouse bread and enjoy.
