Avocado with tomato cream

Ingredients for 2 servings:

  • 1 avocado(s), ripe
  • 1 tsp margarine
  • 2 tbsp tomato paste
  • 2 tbsp water
  • 1 tbsp cream or cremefine
  • n. B. Herbs, Italian (alternatively pizza seasoning)
  • 1 pinch(s) of sugar
  • e.g. salt and pepper
  • 1 tsp sour cream

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Heat the margarine in a saucepan and gently stir in the tomato paste. Add the water, cream, herbs, sugar, salt, and pepper, mix well, and remove from the heat. Halve the avocado, remove the pit, and slice it. Serve on a plate with the lukewarm tomato paste and garnish with a dollop of sour cream. Serve with baguette, ciabatta, or wholemeal bread.
