Axel's egg clam soup a la Pomodoro

Ingredients for 4 servings:

  • 200 g minced meat, half and half
  • 2 spring onions
  • 1 tbsp oil
  • 2 tbsp tomato ketchup
  • 1 liter vegetable broth, fresh or instant
  • 100 g noodles (shell soup noodles)
  • 2 packs of soup vegetables, frozen

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and wash the onions and slice them into rings. Heat 1 tablespoon of oil in a pan and fry the minced meat until it’s chunky (not crumbly like in a Bolognese sauce). Briefly fry the onions, add the ketchup, and stir. Pour in 1 liter of broth, bring to a boil, add the vegetables and pasta, reduce the heat, and simmer for about 10 minutes.
