Baby spinach salad

Ingredients for 3 servings:

  • 3 handfuls of baby spinach
  • 1 apple
  • 50 g walnuts
  • 75 g feta cheese
  • 50 g cranberries, dried
  • 150 ml apple juice, unsweetened
  • 4 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

vegetarian and fruity

Finely chop the walnuts. Wash the apple, halve it, core it, and slice it thinly. Cut the feta into small cubes. Mix the baby spinach with the apple, walnuts, feta, and cranberries. Combine the remaining ingredients for the dressing. Pour over the salad and toss well.
