Ladies’ Kisses, a delicious Italian pastry

Cream the butter with the sugar, salt, lemon zest, and vanilla extract until fluffy. Gradually add the flour and ground nuts and mix with a hand mixer (dough hook) until smooth. Wrap the dough in cling film and place in the refrigerator for 1-2 hours. Then knead the dough again briefly. Gradually form it into logs. Use a knife to cut even, small pieces from the logs and shape them into balls (about 2 cm in size). Place the dough balls on a baking sheet lined with baking paper. If you have the time and space, place the baking sheet covered with dough balls back in the refrigerator for another 30 minutes. Bake in a preheated oven at 160°C for about 20 minutes, then let cool. Melt the chocolate in a water bath. Spread the warm chocolate on the bottom of two cookies at a time and place them together. Let cool thoroughly, so the cookies will stick together.
