Bacon-coated Rabbits
The perfect bacon-coated rabbits recipe with a picture and simple step-by-step instructions.
- 1,5 kg Rabbits
- 3 packet Bacon slices
- 4 piece Carrots
- 4 st Peeled garlic clove
- 1 bunch Spring onion
- 4 piece Onions
- 1 Sticks of leeks
- 500 ml Red wine
- 1 tbsp Tomato paste
- 15 Juniper berries
- 4 Cloves
- 1 Lemon
- Oil
- Salt
- Pepper from the grinder
preparation
- Wash rabbit, then sprinkle with lemon juice. then season with salt and pepper. Wash the carrots, leeks and spring onions and cut into pieces. Cut the onions and garlic into cubes.
- Preheat the oven to 150 degrees.
- Now brown the rabbit on all sides until golden brown and take it out again.
- Fry the onions and garlic in a roasting pan with a little oil, add the remaining vegetables and fry until they simmer in their own juice, then add tomato paste, juniper berries and cloves and pour 300ml red wine, let simmer a little more. Then remove from the stove.
- Now wrap the rabbit in bacon and place on the vegetables in the roasting pan
- Place the roasting pan with the lid closed on the lowest rail in the oven and let it simmer for 1 hour 15 minutes at 150 degrees and add some wine every now and then.
- After the cooking time, remove the lid and cook for another 10 to 20 minutes at 180 degrees until the bacon is crispy.
- Serve with potato dumplings and green salad
