Ingredients for 1 servings:
- 1 pack of smoked tofu, approx. 200 g
- 3 tbsp soy sauce
- 2 tbsp vegetable oil
- 1 tbsp maple syrup
- 2 tsp liquid smoke
- 1 tsp mustard, medium hot
- 1 tsp smoked paprika powder
- ¼ tsp garlic powder

Working time approx. 25 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 16 minutes; Total time approx. 56 minutes
In a bowl or Tupperware container, mix the marinade from all the ingredients except the tofu. Stir until the mustard is fairly smooth. Pat the smoked tofu dry with kitchen paper and cut into small, thin slices, starting from the short side. Place the slices in the marinade for at least 15 minutes, or longer if you like. Line a baking tray with baking paper and arrange the tofu slices on it. Drizzle with half of the remaining marinade. Bake the tofu slices on the middle shelf of an oven set to 180°C (350°F) for about 8 minutes. Then turn them over, drizzle with more marinade, and bake for another 8 minutes. Tips: For burgers, I recommend very thin slices, which only need to bake for 16 minutes. For sandwiches, perhaps a little thicker; in this case, the slices need 24 minutes. You can also cut the slices very thickly and then cut them into bacon strips or cubes after baking, e.g. for classic tarte flambée, salad, or pasta carbonara. Depending on the thickness, the bacon will need longer in the oven. Liquid smoke is a bit hard to come by; most supermarkets don’t carry it. But it’s no problem to find it online; it’s worth it!
