Bacon pancakes à la Didi

Ingredients for 12 servings:

  • 3 m.-sized eggs
  • 9 tbsp flour
  • 1 pinch of baking powder
  • 1 pinch of salt
  • 100 ml milk
  • 50 g bacon cubes
  • 1 tbsp butter

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 42 minutes

Beat the eggs with a pinch of salt until frothy. Add the butter, flour, baking powder, and milk. Mix everything together to form a creamy batter and let it rest for half an hour. Fry the bacon in a dry pan. Heat a non-stick pan (I use a reversible pan). Stir the bacon cubes into the batter. Add a ladleful of batter to the pan. Fry the pancake on both sides until golden brown and roll up. Repeat this process until all the batter is used up. Cut thin strips from the rolled-up pancakes. Divide the strips into portions and freeze for soup garnish.
