Bacon waffles with chive curd

Ingredients for 6 servings:

  • 100 g bacon, diced
  • 3 eggs
  • 250 ml milk
  • 125 ml cream
  • 200 g flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • 1 pinch(s) sweet paprika powder
  • 200 g low-fat curd cheese
  • 4 tbsp cream
  • ½ tsp sweet paprika powder
  • 1 bunch of chives
  • salt and pepper

Fry the bacon in a pan. Mix the eggs, milk, and cream well. Combine the flour and baking powder, then stir into the egg, milk, and cream mixture. Season to taste with salt and paprika. Stir in the bacon, and the waffles can be baked in batches in the waffle iron. For the chive quark, mix the quark with the cream and finely chopped chives. Season to taste with pepper, salt, and paprika and serve with the bacon waffles.
